We just got the Northern-Lite 10'2" a couple of months ago and they said that the cabover bunk headroom had been significantly increased. It is definitely a lot more than I remember older ones to have. I'm 6' tall, so have to use the full length of the bed. The ceiling significantly slants down over my head, but I've gotten used to it. Overall, the amount of headroom is spacious for a cabover. We don't try to watch TV in bed (not into prone TV watching!), so convert the table into the bed and use a couple of homemade wedges to sit and watch TV from the table area. I upgraded the 19" TV to a 32" and it works great. So, all the bed gets used for is day storage and sleeping.
