You didn't mention your RV or tank capacities so most of the advice so far is not very helpful. Two adults will fill a black tank in the average Class A motorhome in about a week. Two adults in the same motorhome will fill the gray tank in 48 hrs or less - unless you don't shower...
If you are traveling, the day you leave is dump day. If you are sitting, its any day you choose but Wednesday is good (hump day can be dump day too).
We leave our gray tank valve open until 24 hrs before we dump. We dump after we have showered so we have a tank full of nice soapy water to rinse the hose. To keep sewer smells out of your coach, let the hose form a U shape - works just like your sink traps.
If you have a tank rinse system, use it to keep your tank clean. Use lots of water when you flush and you won't have problems with solids accumulating.
I think you will do fine.
