Yes you can leave the grey open.......
BUT I don't for the reasons mentioned by others and my own:
1) Soap scum, dead skin, food particles can/do collect on bottom of tank and dry out...tank drain line comes out side of tank and there is a lip. Dried out stuff can accumulate and stink
2) Sewer flies.....they live in the sewer lines and will invade your grey tank due to the dried stuff that stinks
3) I'm LAZY and only want to deal with dumping one time. If I leave grey open then I'll forget to close it and won't have any grey when I go to dump because not only am I lazy but forgetful too
4) Grey tank doesn't have a tank flusher so if stuff dries out then I have to go to extra trouble/means/involvement to flush grey tank....I'm LAZY
