As has been mentioned, "fuel mileage" and "Motorhome" should NEVER be used in the same sentence and or, even post. There is absolutely nothing in the design of a M/H that ENHANCES fuel mileage. They're all rolling KLEENEX boxes. In all reality, expect the stated 6+ mpg. And, as you, the OP stated, there's waaaaaaaay toooo many variables to even come close to accuracy. Our coach, an '04 Itasca Horizon 36GD with the C-7 330HP CAT, get's between 6 and 8, PERIOD.
It doesn't matter if I'm towing or not. All the "man made" control factors (i.e. tire pressure, fuel filters, engine oil and filter and anything else that could possibly effect any portion of fuel mileage) are all in top notch condition. The speed is kept constantly at 62 mph. I get lots of people passing me by but, no biggie. I get there when I get there.
But, I expect bad mileage. If I expected more, I'd travel in a diesel VW and get 50 mpg and stay in hotel rooms. But, we like our M/H and all that it has to offer. It is what it is.
My suggestion, for what it's worth, buy your intended RV, make it yours, and travel to your hearts content and don't worry about fuel mileage except to somewhat, calculate fuel costs per trip.
