I'd stick the larger tanks, fuel station, etc on the towed trailer for the toys. Use transfer pumps for the fresh and grey water (probably won't run out of black).
As for your choices, 27' and diesel with 5k towing capacity pretty much rules out everything. Don't like hearing revs or have a super capacity bladder? :)
