Another consideration of gas vs Convection... when you are off of the grid you will always need the genny running to power the Convection/microwave unless you have a large inverter {which will create a need for more genny runtime to recharge the house bank}. I avoid anything that is going to require more generator time as we are off the grid far more than on it, only 85 hours on our 6-year-old generator.
Sounds like a gas oven is not a cost-effective option for the OP. I prefer a standard gas model but do a lot of cooking in my oven. It's also a nice way to warm up the coach while cooking. If I ever feel the need to replace my microwave I can easily add a Convection/Microwave combo but retrofitting a gas oven could be problematic. Whatever works for you.
