A convection oven is just a normal (usually electric) oven with a fan to circulate the hot air around. A convection microwave is both a microwave and more or less a high-class toaster oven; you can bake anything in it that you would in a normal oven (well, anything that physcically fits).
Obviously, in an RV, you need 120V electricity to use a convection microwave, while you don't need it to use a gas RV oven. That's probably the biggest difference between them in terms of cooking. The convection may be a little more even heating and a bit quicker cooking.
