coolant temperature changed

That's really not hot. Many vehicles run at those temps. As for the temp change could it be the radiator needs to be rinsed? Dirt and insects can clog the grill. Do you have a rock guard on the front of the coach?

While the temps aren't harmful, I would check some things. Coolant level, cleanliness of the radiator, fan clutch, fan drive, etc. Something is getting tired.

Water Wetter?

To combine two suggestions already offered:
Time for a cooling system service.
Flush and refill coolant and a new thermostat.

IF this is a used unit that is over 5 years old.

Otherwise don't worry about it as the in-dash meter itself can vary that much without any real change in the engine. This is one reason why many don't HAVE temperature gauges anymore and most of the ones that do don't have scales on them.

If at any time the water level in your overflow tank dropped to zero, air could have be sucked in to your cooling system. Any air in the cooling system may allow it to run hotter and can even cause cavitation of the water pump and a boil over condition. You may need to just purge your system of the air bubble to get things back to normal.
It could also mean that your fan clutch is starting to fail.

I added an aftermarket temp gauge and discovered the factory gauge was 20 degrees off.

I have used Wetter Water by Royal purple on several vehicles it works. The temps on hill climbs will drop.

Cleaning the radiator was good starting point. If the coolant maintenance has not been done in a while I would agree that doing it would be a good next step. When it was done did were the thermostats changed? Even if the thermostats have been changed then I would recommend having the thermostats changed again. That would give you a base line to continue to troubleshoot.

Inspect the cooling system to see if any of the hoses are kinked.

Is the fan running more often with the higher temperatures? If the temperature continues rise the fan will continue to run more and more. Having the fan run more often will hurt your gas mileage.

Here is another thought. Are you using the Dash AC? On my rig when you turn the Dash AC it turn the coolant fan on full to cool the AC condenser coil mounted on the front of radiator. For troubleshooting you may need to have the AC off to get a consistent temperature readings.

Are the readings from the dash gauge or from the engine computer using something like a Silverleaf? The engine computer will be more accurate and much more responsive.

All though the 200-205 degree aren't are not "horribly" high, based on the fact that it was running at 195 and designed to run at 195 the increased temperature should be investigated.
