#3, yes, did it for years. The cab AC should do an ok job of cooling the front of your rig but if it's very hot or you want the rear cooled, run the house AC. Fuel burn will be around 1/2 gallon an hour which has minimal effect on gas mileage.
#4, yes, did that for years too.
#5, experiment with it. A 31' motorhome is always "hauling". Towing a lightweight boat will have very little effect on performance. Nothing at all like hooking a heavy RV trailer to a pickup.
Before my first motorhome I had a travel trailer, and found driving and setting up the motorhome to be much easier. With your fifth wheel experience you have nothing to worry about.
