We all know those first trip jitters. Just keep in-mind that if people in their 80's can do it, so can you.
I get those jitters the first time every year, but never worse than that first time ever. Once on the open road, you will calm down. If you are like most of us, you will eventually find it to be a form of therapy.
Your first gas station stop will be a test on the nerves. Make sure you swing far around the pumps, then approach them in a straight manner. Just because your motor home clears, does not necessarily mean the trailer will clear. Hopefully towing the boat you have will be easier for you than our tow vehicle is for us. Watch your mirrors closely on every approach.
The rule on running the generator and fridge while driving is that it is perfectly fine. Many people do so and the 100 degree heat makes it mandatory in a 31 footer. Just be sure to turn them off, ideally before entering a gas station, but surely immediately after you stop at the gas station pumps. Just let the generator with roof-top a/c and fridge-on-propane run at all other stops.
Given the weight of your rig and tow, I would recommend you turn tow/haul mode on. If you forget to turn it back on with each engine startup, your Ford E450 chassis will remind you soon enough by dragging it's feet.
