DEF usage is proportional to power output. Go heavier with the right foot, and it can drink it quickly, especially in the mountains. It controls NOx, which is goes up as combustion temps climb. On the contrary an empty pickup putzing around town may not use hardly any at all. But even then the cost/per mile is pretty negligible. Just don't run out or you won't be able to drive faster than a brisk walk (and If it goes into limp mode, and you shut it off, you won't be able to re-start until you add more). Some AAA contractors will do DEF delivery. Its not hard to find, except in the middle of the night in the middle of nowhere ;)
