levelers - which fluid
says I can use mercon v or dexron III .... but when I search trying to find a difference to figure out which one to use I find cautions saying to not mix them. I just want to add some as it is read...

There is NO REASON to change out Fluid in a Slide/Jack system. LCI does state to do so, but there is no valid reason to do so. There are NO gears or moving parts to overheat or get debris in the system. Replace if it makes you feel good, but it is not necessary. Doug
The main reason to change the fluid is the manufactuer recomends it. You may do what ever you want.
