Leisure Travel had a Chevy van called Free Flight that might have had a twin bed alternative. Roadtrek 190 models have had twin options.
We bought a used B that had twin beds. They work fine for us and can be converted to a king... also twins suit non-spouses on a trip together who don't want to share a bed. I wanted a sofa bed, though, and I think twins aren't as common.
So I would say - keep an open mind when it comes to layout. You may see a good one with sofabed and all sorts of options you hadn't considered (2,3,4 seats up front), color schemes, etc. Sometimes extra seats can be easily replaced by storage units,
And don't wait too long when you find one... because a well-maintained used one at reasonable mileage and fair price won't last long.
