Sportsmobile has class Bs with twin beds in the back. I'd also second keeping your mind open -- on some Roadtreks, one can replace seats with cabinets/armoires which add storage.
I also like the twin bed floorplan for the same reason the OP mentioned... if travelling alone, the second bed doubles as a temporary place to put stuff when parked. When about to head out, I can then take the trouble to start putting stuff where it belongs.
Of course, if you need lots of storage and want a "B", there is always getting a hitch mounted cargo rack or an enclosed utility trailer which can sit at a campground when not in use.
Class "B"s are in high demand. If one pops up and is affordable and in good condition (I'd take two people to check it out -- one person to inspect the RV part, one to inspect the engine/drivetrain), it would be recommended to jump on it.
