Had a similar problem and it was not overheating.
Get a infrared thermometer when the gauge reads hot stop open the hood and aim the infrared thermometer at a angle along the length of the upper radiator hose. When I did this found the temp was the same as when the gauge was reading lower. Turns out that in our e350 there is a resistor in the instrument panel that was going out causing the temp gauge to spike. Watch your fuel gauge we noticed that it would change when the temp gauge spiked.
