Two adults in any super tiny motor home could be very testy. Any size will work, but not neccessarily enjoyable. When you determine how small will work comfortably, your fuel economy would likely be dissapointing.
There is currently one exception to the fuel economy dilemma in the new RV market. That is a motor home constructed on the Mercedes Benz Sprinter chassis with diesel engine. Instead of 11 mpg with a smaller B+, you'd be getting around 14 mpg, maybe 15 mpg.
If fuel economy is your highest priority, you may consider forgetting RVing all together and travel in a car with luggage. But that is a thumbs-down idea on this forum. Personally I could never enjoy road trips that way.
