A good reference point would be a Phoenix Cruiser 2350 offered on the Ford E350-V10, E450-V10, and the Sprinter V6 Diesel. Driven conservatively and not towing anything, the E350 "Trip Average" will be around 11 mpg, the E450 around 10 mpg, and the Sprinter around 14 mpg.
Driven normally (obeying speed limit) I get a solid 15 mpg with a Sprinter RV that has a higher profile body than a Phoenix Cruiser. The PC should be a tick better punching a smaller hole in the air.
A Sprinter "pure B" will go high teens easily.
5 cylinder Sprinters get better economy still if one is looking for used RVs.
