WOW! Sounds like not a lot of fun. I've never been a fan of RV plumbing. Had to replace just about all the pex plumbing in a 5th wheel I had before I could sell it. At least the new owner shouldn't have to worry about plumbing for a while.
Sorry to hear about the pressure regulator and fan. Hopefully the fan is an easy fix. I once found a closeout deal on a Carrier A/C at an RV store that was going out of business. Best A/C I ever had. My old coach had two A/C units, and I found I never had to run the second one any more. Hopefully you will get this all sorted out soon. :)
