The temperature of the ice cube mold dropping triggers the "harvest" cycle of the ice maker. If the mold doesn't get cold enough, it will never make any ice. If the mold doesn't get cold enough fast enough, ice production will decrease. My notes tell me the trigger temperature is 15 degrees - cold enough to ensure the ice cubes are fully formed.
