Pretty much what our dog does also. I close all the window blinds to preempt potential barking. The dog thinks the curtain is a solid wall, so far. If crate/caging isn't an option somehow closing the dog in the back half of the coach might be best. Try blocking where the dog jumps on to the dash with something like an empty box. You could add a second curtain that will hide the dash so the dog cannot see what they are jumping onto. Just depends on how aggressive the dog is.
