To answer your off-road capabilities - that depends. Since you live in the East some of your roads might be actual dirt. I'd be real careful with that, especially if it rains.
We took our 40' on many Western roads but not dirt ones. They were gravel. Also, before attempting to drive on one we always disconnected our towed vehicle and scouted it out first to make sure it was solid with no big dips. We also looked for our campsite at that time so that we knew how far we'd have to drive and to make sure there was a place suitable for us. We had to watch for tree overhangs and tight turns. We loved boondocking and had no problems doing so.
Keep in mind that it would be very advisable to tow a vehicle behind your motorhome, especially if you get off-road. It will be your emergency-use vehicle to get out safely, if needed and for quick medical issues.
