Redding to Grants Pass, along I-5, as far as I'm concerned, is a beautiful route with all sorts of nice scenery. Only issue I am not too keen on is all the trucks. But its about the only direct route.
To get to Coos Bay, I would continue up I-5 and head over to the Coast on Hwy 42, unless your journey is as important as the destination, then I would take Hwy 199 down to the coast and head north on Hwy 101.
If you do take 199, while in California, you may want to stop near Jedediah Smith State Park and enjoy some of the nifty environment this state has to offer. ;)
