Redding, CA to Grants Pass, OR I-5
We will be doing this trip in mid May. Has anyone done this route? And then Grants Pass to Coos Bay.

I disagree. It's one of the prettier interstate drives I have seen.
Do check road conditions online -- the west has had an unusually warm winter, but black ice could still occur, depending on the weather and when you go.
