My wife would agree with me in that we are managing well without an oven. We do well with the stove top, microwave/convection oven combo, and our outdoor Coleman gas grill. We do like keeping the heat outdoors with our grill. If we used our rig for a season at a time instead of the two to four weeks at a time, we'd probably appreciate an oven much more.
In our rig, having an oven would mean reduced storage efficiency. Given our vacationing style, such efficiency weighs heavy, more than for some people.
Here is our galley without an oven. I did redesign the drawers to maximize storage, soon installing button latches. In the pictures, the stove is hidden under the green Corian inserts. We'd be giving up a lot of storage efficiency to have an oven. Our rig is small so we expected compromising on this one. If we had a typical rig, a real oven would be a nice thing to have.
