If your headline is like mine in my 1992 Ultrastar, it is vinyl attached to foam attached to luan. The foam is failing due to age and hence the drooping.
I removed the ceiling panels, reused the vinyl, used new foam and luan and re-installed the ceiling panels. The new foam was underlay for Pergo. Time consuming but not that tedious. I have heard of some that remove the vinyl, scrape off the foam, and contact glue new automotive headliner.
