Mike, I really think that sealing the cabover up makes better sense than replacing it with a "B+" fairing. I wonder if the fairings used on some of the cube vans would work. I think they'd be more readily available and at a lesser price. But I also think that their footprint on the cab roof is smaller than the cutout that was made by Winnebago before installing the cabover you have now.
Further thinking makes me wonder what the structural integrity would be with the OEM cabover removed. C's don't have much crosswise framing. The "frame" is two sides, that include the part for the cabover. Side-to-side integrity comes from the front skin. 'Least that's how I see it...
