Thetford Toilet sprays water over the front edge

Seems to me you need a pressure regulator on the "City Water" hose. Won't fill the coffee pot as fast, but shore tie water pressure is unpredictable and can be excessive.

An adjustable regulator would be nice, you could probably find a pressure that gave you a decent shower and still didn't push water over the toilet rim. So far I've only used non-adjustable ones. The brass ones, not plastic.
