Depending on your budget, converting from HDMI to SDI on one end then back from SDI to HDMI on the other. With BNC to F adapters, you can run the SDI signal over the existing coax. SDI is a full digital HD signal with embedded audio.

Did you look at the price on those? The cheapest is $295 and it looks like you need two of them, one to convert to analog and one to convert back. Doesn't sound like a reasonable option for what the OP is trying to accomplish.
I did mention about budget you know and yes, I am very aware of the price as well as the benefits of SDI signal since I work with SDI in my profession. If you want the very best possible full HD digital signal over the existing coax then conversion to and from SDI is the way to go. Also, there is NO analog involved here. It is pure digital with embedded audio and considered superior to the "consumer" HDMI format.
As I also mentioned, if you are willing to run wire yourself, the HDMI to Cat-5 adapters another poster mentioned before me would be the way I would go as HDMI typically has a restriction on the Max run length.
