I have a 29' Class C, with the normal side facing sofa, 3 seat belted positions, None with shoulder harness, and 2 belted positions at the dinette, which I don't think is safe, as her legs will be jam...

I thought of that but my rear facing seat at the dinette doesn't have belts.
You might check,mine has a steel bar across under the dinette at floor level that they are attached to. If it does you might be able to attach them there.
