Wiring A/C junction box in to 20amp outlet
I would like to know if it's okay to take the junction box mounted on the roof for a rooftop air conditioner that no longer exists on my unit, and relocating it to use for an outlet on a 20 amp circui...

If your description is basically repurpose a dedicated circuit from the roof to the interior then by all means go for it. Get the right size and wire type and you are good to go.
