Not bad looking rigs. As you said, put some miles on it. One issue with old vehicles is radiator core fin separation. The fins lose their bond to the tube and start to flake off. You can check this and it's usually worse in the corners. If you want to throw some "insurance" money at it, do the belts, hoses. Check the water pump for tightness. When the belts are off and you spin the water pump and see how it coasts to a stop. It's not a tell all test but a tight seal will sort of grab at the end of the spin vs a well worn pump will have little resistance. It's one of those things you need to see to be able to notice the difference.
I would also service the caliper slides. I like to compress one caliper piston at a time and run it back out. If it seems to be hard to compress it's starting to freeze up and you will have a smoked rotor and pads. You can also sometimes carefully lift the edge of the boot to see if it's got corrosion or crud or leakage. Do the fuel filter, and another throw money at it insurance item would be the fuel pump. If the engine and trans seem ok it will be the other support items that will usually strand you. Other than that the number one thing to have is money on hand.
Everyone weighs things differently but when buying used stuff and depending on the miles I will go through and replace all the stuff like starter alternator u joints belts hoses fuel pump etc. I have never been stranded.
I have never had a C but I have worked on them and hated it. Give me a pick up with room around the engine.
