A nice (pork) butt....

...is going on the smoker tomorrow morning, cooking low and slow all day, and the expectation is some fine pulled pork for dinner tomorrow evening. At some point going to add some mac 'n cheese to the smoker as well. Haven't tried that one yet, so it should be quite an experience. What's on the menu at your camp?

  • Pork Chop on a Stick. Cut 1" to 1.25" slabs from pork loin and marinate in Italian dressing (or your favorite marinade). He bought dowel sticks a bit bigger than a pencil and sharpened them in a pencil sharpener. Stuck each chop and grilled them.
  • Did strip steaks pork chops baked spuds with sour cream. Corn on the cob. 8/31/13. Any Questions on the BBQ. Tonite It's Pork chops with BBQ sauce, Baked spuds and a salad.
  • Crab Salad on Avocado half, BBQ Lobster, Best Ever Cheese Bread, Garlic Green Beans, BBQ Rib steak - tail on, and pineapple custard pie for dessert.

    Crab Salad can be prepared a day or two in advance, then put together with the avocado just before serving: same with cheese bread; prepare cheese filling, store in plastic bag in refer, then, spread on bread and throw on grill a few minutes before serving. Meat will be prepared in advance and grilled just before eating. And, of course, the pie can also be made a day or two ahead.

    You get much less tired by doing a lot of the advance work, then simply bring it together the day of your planned meal. There's usually enough food left to have leftovers for at least a day!
  • Grilled quail and roasted red potatoes with asparagus spears. Sweet iced tea and pineapple upside down cake. Settled in and watched the Tigers finally win over TCU. Life is good.
  • Well... I did a pork loin in the slow cooker with red potatoes, baby carrots, portobello mushrooms and vidalia onions. Tomorrow is an easy day with leftovers and very little dish washing.:B
