Adjusting muffin cooking time?

How do you adjust a recipe for 6 muffins to use an 8x8 pan instead? Thanks!

Calculate the volume of each and adjust accordingly. Or just dump it in the pan to about 1/2 full, cook until just browning, then stick a fork in it to see if it comes out clean.

Makes good sense to me either way it's done :).
A six muffin mix will prolly utilize about a cup of dry ingredients and rise while baking to about half the depth of the average 8x8 pan or about the height of a sheet cake. A double mix would bring the rise up to the pan's 2 to 2-1/2" height.

Cooking time for a one recipe mix would be approximately 20 to 25 minutes. A double recipe mix would be about 30 to 35 minutes. Use a toothpick in the center to decide if the muffin mix is fully baked. If the toothpick comes out clean it's done.
  • They are talking about an 8" X 8" square baking dish. Personally, I start checking at 5 minutes prior to muffin directions.
