Makes good sense to me either way it's done :).
A six muffin mix will prolly utilize about a cup of dry ingredients and rise while baking to about half the depth of the average 8x8 pan or about the height of a sheet cake. A double mix would bring the rise up to the pan's 2 to 2-1/2" height.
Cooking time for a one recipe mix would be approximately 20 to 25 minutes. A double recipe mix would be about 30 to 35 minutes. Use a toothpick in the center to decide if the muffin mix is fully baked. If the toothpick comes out clean it's done. - RVcrazyExplorerThanks!
