We are vegetarian and I have tons of quick to make recipes and I wouldn't know where to start but here are a few of our favorites.
Black Bean Soup
2 cans of black beans, drained and rinced
1 can of veggie broth
1/2 jar of Salsa, we use Med Pace but depending on the level of heat you like you can use mild to OMG.
About a teaspoon of cumin.
Dump in pan, heat and serve with sour cream, and chopped green onions.
Veggie Soup is also quick and easy
5-6 cups of veggie broth
2 1 lb bags of veggies, we use the California with Broccoli, Carrots, Caul, but what ever you like
1 can of diced tomatoes
2 cans of beans
4 cloves of garlic, smashed
1 teas of basil, 1/2 teas of Oregano and thyme
Shake of Tabasco
And you can also add 1/2 cup pasta, 2 diced potatoes, frozen or canned corn, 1/2 cup of grains like rice or barley.
Salt and Pepper.
Bring to a boil and look on low for awhile to mingle the flavors.
Other quick meals would be canned tomato soup with grilled cheese
Mac and Cheese, tossed salad,
We love fresh tomato sandwiches, with cucumber and red onions on sourdough and we use hummus instead of mayo.
Easy Enchiladas is also a favorite
I have those Microwave bowls that have ventable lids, and on the bottom I pour about 1/4 cup of enchilada sauce, then I tear a tortilla up to fit the bottom, I open a can of vegetarian refried beans, and put about a 1/4 cup of that on top of the tortilla, then some corn and ripe olives if you like them, and then repeat, ending with a third tortilla, and covering with the enchilada sauce. Nuke for about 3 minutes and you have big lunch.
