any easy to prepare vegetarian meals

I wanted to try something different on my next camping trip. So I thought I would try making some vegetarian meals. Having never done anything vegetarian I figured I'd reach out to all of you for ideas.

What are your favorite easy to cook while camping vegetarian (not vegan) meals. I have my travel trailer so I can use any of the amenities (oven, stove top, microwave) I just need some good recipes to try. I guess I'm thinking dinners, but maybe it would be fun to expand to a fully vegetarian camping trip.

  • Think food groups, or nutrition.

    Proteins:
    baking beans
    nuts
    cheese
    Other dairy, ie. yoghurt*.....
    milk.
    eggs


    Fruit:
    Oranges have more fiber than tangerines
    apples
    blueberries
    grapefruit
    raisins.......
    tomatoes

    Vegetables,
    green, ie, crunchy
    beans with pods
    celery
    spinach, lettuce.....

    ish greenish - carrots, peas, squash and others that get soft when cooked

    Starchy, ie strong on carbohydrates,
    potatoes
    corn


    Other carbohydrates:
    old fashioned flour, yes it has seriously changed to come out with a more even rise. (talk to your health food store)

    cereal with fibre.

    ===============
    Breakfast - 3 food groups
    ie. orange, rice cakes or oatcakes, milk. No preparation needed

    Or spoon sized fiber cereal in milk with nuts, raisins and ground flax seed*

    Lunch, 3 food groups
    - fried egg sandwich, with lettuce and tomato. I use natural ingredient mayonnaise**
    - Potato salad, with egg, celery, lettuce, or crunchily cooked green beans, onions, natural salad dressing, ie, plant oil.

    Supper, 3 food groups
    - Pasta and cheese with milk, onions, cooked leafy veg, diced, tomato
    - Spinach pizza with more than one type of cheese, onion, tomatoes or tomato sauce. Of course, if you make your own pizza dough, it will have eggs in it.
    - Greenish salad - eggs, diced ripe cheese (cheddar), cooked pasta or potatoes, chilled, raw cabbage, lettuce, or celery or all 3, nuts, raisins, pickles or carrot relish, natural ingredient dressing.

  • Just leave the chicken out if you want:

    1 onion (chopped)
    3 gloves garlic (minced)
    1 can kidney beans
    1 can pinto beans
    1 can chili beans
    1 can roasted diced tomatoes
    1 can rotelo (chopped tomato and pepper)
    1 beer (minus 1/3 to drink for yourself as you cook ;)
    1 bell pepper (chopped)
    1 rotesserie chicken or 4 cooked breasts (chopped or shredded)
    1 packet taco seasoning
    1 packet ranch dressing
    1 teaspoon chili powder

    Sauté onions and garlic in a bit of olive oil until onion is clear. Dump in all the above ingredients without draining the cans prior. That's it. Heat and I serve with avocado, green onions, cheese, sour cream and over tortilla chips. It's better on day 2.
  • Grab a carrot, sprinkle with a little salt, insert in mouth .... bite ... chew ... swallow! Simple vegetarian!
  • I recently completed a workamping position at Johnson's of St. Mary, Montana at the east gate of Glacier National Park. At the world famous Johnson restaurant I was introduced to barley and when I told a friend about it she introduced me to bulgur. Both are easy to cook, very healthy and go well with vegan meals.
  • Burritos, quesadillas, scrambled eggs, omelets, rice/bean/whatever bowls with salsa or teriyaki sauce

    No recipes needed for these.
