Any tips on Cooking and freezing before trip?

I wondering if anyone has cooked and frozen chicken, hamburgers or steak for later use on camping trips? many of our trips are in the winter and going out in the rain or snow to put meat or poultry on the grill is not enjoyable. so can I buy frozen chicken breasts, BBQ them at home and freeze them for later? Can I make and cook a large patch of pancakes and freeze for later too? I have heard of using a crockpot put in the sink and running the generator while traveling.

  • Look at all the types of foods in your freezer aisle. Any of them can be prepared and frozen for future use. We are full-time and have some leftovers that we freeze and use on travel days, but for the most part we prepare our meals and eat them.
  • we have always cooked any thing we wanted to eat during elk season and frozen it then throw it into the oven and heated it up. worked for us.

    After cooking briskets, I'll cut the big slab into sections about 2" wide.... Freeze them at that size.

    I'll slice into "sliced brisket sized" slices just before reheating.
  • I make casserole type meals and freeze them. King Ranch Chicken is a favorite. Cook ahead, divide into 2 people portions and freeze. Our trip to the campsite from home I set a portion (in the freezer container)in the sink to defrost and when we get there I put it into the microwave and add the fritos and cheese in the last 15/20 seconds of heating. So many foods can be cooked ahead of time and then re-heated.
  • Why not freeze in disposable aluminum pans and heat in the oven. In the winter you will also help to heat your rig.
    For enroute use you can buy a nice 12 volt oven that takes small disposable pans and plug it in while traveling
  • Can I BBQ tri tip and either freeze whole or sliced? DW is now on a Low sodium diet and I have to rework the menu. So much of what we used before is loaded with salt. We have switched seasonings to salt substitutes and herbs.
  • I will smoke a big brisket, or several slabs of ribs. Freeze and then food-saver it into 2 person servings. Use it at home or camping (for nights when we want easy dinner).

    To eat, I'll preheat oven to 350... Put meat in round cake pan... Sprinkle very lightly with a bit of water (from my hand, not directly from faucet)... Cover pan with foil and heat thoroughly - about 25 mins or so.

    Turns out great.
  • DeWafelbakkers frozen waffles and pancakes are great heated in the microwave. You can find them in bags at Walmart. I buy frozen chicken in cubes that I use for soup and chicken and dumplings (using canned biscuits) and fajita strips for tacos or fajitas. Ball Park now makes frozen hamburger patties that you heat in the microwave. They are pretty good. I don't see why you can't grill hamburgers, pork chops and chicken and freeze it for heating. I freeze hot dogs too. I buy spaghetti sauce in a jar and add frozen meatballs. Cook the pasta ahead of time and refrigerate in freezer bags. You can also make chili and soup ahead of time and freeze and reheat. Potatoes don't freeze well so I would put rice or pasta in my soup instead of potatoes. My mom did that all the time. The only thing that I would have to consider is freezer storage space in my RV.
  • If you use your generator to power a crock pot while traveling, that is a very expensive meal. An efficient diesel generator at very light loads may use as little as 1/3 gallon per hour. At $4 per gallon for nine hours, you're looking at $12 for just the power. And that's for a very efficient generator. More likely, it would be about 1/2 gallon of fuel per hour, so $16 for running the CP 8 hours. For that, you can get a rotisserie chicken and salad for 8 people!
  • We will steam chicken and/or ribs ( 45 minutes). Then freeze in BBQ sauce. After a slow thaw, a quick hot grill and we're done.
