how about risotto? I love a short grain brown rice risotto. Maybe use veg broth, and your fave veggies. I love asparagus and portobello mushrooms. Maybe some sautéed shallots.
And saffron quinoa? Yum! Just rinse the quinoa for a full two minutes under warm running water to wash off the bitter coating. Toast in a dry frying pan for a few min, then add some oil to coat, toast another minute, then add cooking liquid. Some veg stock, a few threads of saffron, your favorite seasonings. Husband likes this too.
I don't eat soy anymore due to breast cancer, but I used to love Morningstar farms veg bacon. Tasted delicious. Made a great BLT.
