Uh, any vegans here?

Long shot I know but looking to reverse some heart disease in hubby and need to find
delicious meals to entice him. He is on board but they have to be good.

  • vegetarian is fine. I do have some modifying skills and anything is appreciated. I've poured through lots of recipes but need more....many more.

    Do the recipes have to be vegan, or is vegetarian okay?

    Vegans don't eat Fish, chicken, beef, pork, etc. - ALL are MEAT.

    Vegans also do not eat DAIRY (cows milk, butter, cheese, eggs).

    Vegans DO eat oil and sugar.

    Whole Food Plant Based (WFPB) folks don't eat any of the above.
  • Kimchi. Easy to make, delicious, can be made with whatever veggies strike your fancy. It's super good for you, too.

  • If you changing diet for health vs moral reasons then Google Pescetarian - more flexibility and arguably more healthy.
  • My wife is "Nutritarian." This is a life plan by Dr. Joel Fuhrman. You can order his books on Amazon.com. I'm a retired RN and the science behind Dr. Fuhrman's plan is solid. The first book to read is "Eat To Live." There are others about reversing diabetes and some recipe books. There is also a relatively new Facebook group dedicated to this and lots of stuff on the web if you search for "Eat To Live" or Dr. Fuhrman. I'm about 85% there (still eating some tuna and white meat chicken every now and then) and we both feel MUCH better. My wife has dropped significant weight and will soon be off one - if not both - of her blood pressure meds. We hope that, by the end of the year, she'll be off her statin, too.
