Good Vegan Recipe Source

Great ideas. I think corn tortillas might be gluten free, but not sure. If they are you could have fajitas, just make your own guacamole to make sure it's vegan and you can purchase dairy-free sour cream, (family won't know the difference) Grilled veggies are delicious stuffed in a tortilla, yummy

Also, I wouldn't be afraid to run your menu ideas by them. For instance, if someone said to me "I'm thinking about eating spaghetti, do you guys ever eat that and how do you prepare it?" I would respond by saying, yes we eat it but I use spaghetti squash "noodles" instead of noodles and leave out the meat. I'm sure there are other well known dishes they still eat in their household they've just found ways to modify it. At our house I often cook two different versions of things. Like the spaghetti example...I use spaghetti squash noodles but I still make regular noodles for my husband. If someone else was joining us I would make meat on the side for them to add to their own spaghetti as we don't eat it. When we have wraps my husband will have his in a tortilla while mine is in a large collard green or chard leaf. Anyway, you get the point, sometimes it's just a matter of making small tweaks to simple dishes.

I eat a fairly clean, mostly plant based diet. I actually feel really uncomfortable when people ask me over for dinner because I'm picky about what I eat and I don't want them to feel bad or pressured trying to accommodate me! I feel better when they ask me to bring along a dish to share that I like. That way I know there is at least something I can eat and provides some relief to the host too. No matter what you make you could always include a salad. Most healthy eaters including gluten free vegans LOVE salad. A salad "bar" set up would be a dream come true for me! With lots of different toppings. Another simple idea that everyone can enjoy is make your own tacos. That way you can still have meat, cheese, etc. for the meat eaters and the non-meat eaters can have a taco salad with beans, guacamole, veggies, etc.

If she doesn't eat gluten due to celiac, you will need to make sure
anything you use is labeled gluten free (probably even if she is gluten intolerant as well really).

I would really think she wouldn't expect you to do this as it is kind of an adventure for anyone that is not used to cooking that way.

Frankly, I wouldn't expect it.

I have tried turning vegan and always thought that vegan food lacked ample variety and flavor, and I am a retired club general manager from the private club industry and a foodie. Please accept my sincere apologies, I assumed you cared about your guest's health AFA the "hundreds of peer reviewed studies" concerning the dangers of a gluten-free diet. :(

The internet has an overwhelming number of recipes. The other day I got one for "bean bread" that was just 1 cup cooked beans, 1 banana, 2 T ground flax, 1 t cinnamon and 1/2 t vanilla. Really tasty with some fruit on top. Today I made it with a sweet potato instead of the banana and chopped rosemary instead of cinnamon & vanilla. Again, tasty- this time with a homemade hummus (gluten free& vegan), and a few strips of roasted red pepper.

One of our favorites is roasted vegetables (portabella mushrooms, red pepper, sometimes brussels sprouts, served on black rice (pretty sure rice is gluten free, but it doesn't hurt to check), and some garlicky hummus on the side for dipping. Easy and good.

Tomorrow I'm making a sort of unwrapped cabbage roll, but no meat. Just cabbage, kidney beans, onion, and diced tomatoes (and of course paprika & caraway). Tossed into the crockpot for the day.

This time of year I often make roasted brussels spouts and sweet potato (I pre cook the sweet potato to speed things up). Tossed with some garlic chili sauce and served onto of white kidney beans it is another easy meal that will please everyone.

Try to serve beans or legumes with a meal - they are a good source of protein (and fibre), and are filling.

Vegan eating can be good, even for the non-vegans ;-)

Oh, dessert. Freeze some almond milk into an ice cream tray. Also freeze a banana. Blend those with a tablespoon of peanut butter (or other nut butter), a tablespoon of coco, and a dash of cold almond milk and you have a sort of ice cream. Yum.

Interestingly the site also has information about how what you eat might cause disease. They site hundreds of peer-reviewed, scientific studies to back up the claim that animal protein is bad for you (i.e. causes heart disease, cancer, and a host of other diseases). Much of what is known about the effects of our diets doesn't make it to us as big pharma, and the food industry, control much of what we hear.

Wow, only 1% of the population has Celiac disease, so your guest is a "rare bird" indeed! If he (or she) is simply a vegetarian, casually ask them if they're aware of the serious medical risks of a gluten-free diet. Only if you care about them, of course. :B
