Any vegans here?

Must be someone out there? Minority I know but....

For various reasons (better health, etc) I have been a vegan for about
four months...prior to that mostly a vegetarian. I am converting husband who was not a die hard meat eater...more like an omnivore who would eat most of what I put in front of him. He has agreed to this somewhat reluctantly but he is okay with it after seeing "Forks Over Knives" documentary.

My problem...I need some exciting recipes. I haven't been accumulating recipes over the past four months but I need some good ones now to make what he eats more exciting than repetitive.

I have a chili recipe, a burrito recipe, a GREAT chocolate mousse/pudding recipe, and sautéed veggies with rice or quinoa, a stuffed sweet potato recipe. He loves Mexican type food with his salsa!

Can anyone point me to a good website and/or share some favorite recipes?

By the way I lost 10 pounds which I had been wanting to lose and it just fell off with no effort what so ever... I watched my jeans just loosen up! whoopee!

  • We like Boca burgers, Boca crumbles, some morningstar burgers, morningstar crumbles, morningstar breakfast sausage, morningstar chicken strips are great for hot wings, tofurky roasts, tofurky deli slices, and tofurky kielbasa and italian sausages are excellent, quorn meatless chicken, and gardein beefless tips are very tasty.

    2 cups yellow squash, cubed (about 2)
    1 1/2 tsp salt
    3 cloves garlic, crushed
    1/4 tsp cayenne pepper (optional)
    1/3 cup olive oil
    1/2 tsp cumin seed

    1 onion, sliced
    1 green bell pepper, seeded & sliced

    Layer on the onion
    Sprinkle on last 1/3 of oil mixture
    Sprinkle on the marjoram
    Layer on the bell pepper

    Cover and bake at 350 for 1 hour

    Layer on the tomatoes
    Sprinkle on the dill seed

    Cover and bake 15 minutes
  • You might browse Allrecipes.com and Food.com. They both seem to have an end less supply.
  • You might want to search for "macrobiotic recipes" which should have many vegan recipes.
  • Breakfast variety is a tough one in our house. I like the MANY different flavors of garden burgers as a good morning protein.
  • Go Dogs, I just made my first batch of cultured veggies on Sunday. Should know in a day or so if they taste good as I've never had them before. They look real pretty and colorful in the mason jars though:B

    I will check out the site...some of the cultured stuff is a little outside my current range but I will hopefully get to try some. My gastrointestinal flora needs a big time fix right now.
  • Hmmm..TVOV...I mean vegetables and grains (no animal protein/only veggie protein, no dairy, no gluten right now for me unfortunately, no eggs). I mean very healthy close to the earth eating...whole foods. Not processed.

    Do I mean, no leather...nope. Am I against anyone else eating animals (nope). Did I miss anything???

    Recipes for eating healthy green stuff with grains that doesn't taste
    nasty...I love most all veggies.

    How about a good curry as I am talking myself into liking it...I need a curry recipe.

  • It might a little off your topic, but check out, 'Cultures for Health' website. They also are on Facebook, (who isn't). They have a lot of info on cultured/fermented foods. Vegan and Vegetarian ideas. I have dealt with them and they have excellent customer service.

    Do you mean a strict vegetarian, or a practicing vegan? Vegan is a lifestyle and way of living / thinking, much more than just what you are eating.
