The advantage of doing it from scratch is that you don't need to keep a single purpose mix on hand for those times you want waffles.
I like everything from King Arthur, but I suspect their "from scratch" recipe will produce even better waffles than their mix. For one thing the yeast will be fresh.

You are right of course but if some of the ingredients are not normally found in your pantry a well made convenience mix can be useful. I'm renowned for my non baking skills and will use any ''non laden with additives I canna pronounce'' mix available. As a side benefit it helps in impressing my DGD that her "Noonie" is still Charlene in Charge;).
