Beyond Corned Beef: Traditional Irish Recipes

Here are some Irish recipes we'll be trying in the coming year. The meats and stews will be particularly suitable for DOGs and family gatherings and it will give us a few guinea pigs er guests to try these out on. Link to recipes below the list.

Fun fact: poor Italian immigrants to Ireland/Great Britain created that now perennially British dish Fish and Chips.

  • I love colcannon made any way with kale, cabbage or a mix of both! Can't eat the carbs I used to so I'll have to settle for a taste of somebody else's! Lol thanks

    I've seen that cabbage is also used in the modern era. All the old Irish cookbooks call for kale originally. Once the center rib is removed it becomes very tender and tasty. Probably Bok Choy and Chinese cabbage are also an option in place of the kale. Any brassica will do if you remove the tough bits, I'm guessing.

  • Check out the Irish Country Doctor series of books by Patrick Taylor. At the end of each book there is a section of authentic Irish recipes from the good doctor's housekeeper, Kinky Kincaid. Good reads and good recipes.
