Boneless Pork Loin

Had this last night for dinner.
2 1/5 lb boneless pork loin covered in Grey Poupon mustard and wrapped in shingles of Bacon. Placed in a large cast iron skillet uncovered and into a pre heated oven at 350 until the internal temp reached 145. {approx. 1hour 45 min}.I removed from the oven and let it sit for 15 min. allowing the internal temp to come up just a little more. I Also put two sweet potatoes in the pan along with roast to round out the meal. I love the flavor of food cooked in cast iron but it is not necessary. You could use any baking dish. Some people will say pork needs to go to 160 but it tends to dry out a lean cut like this one. {USDA has changed their recommendation for Pork,bacteria does not survive above 140) The result was a beautifully tender, flavorful and very juicy roast! The sweet potatoes were wonderful and along with a green salad made a terrific meal. Simple to prepare and tastes wonderful!

P.S. You could also do this in a Dutch Oven over a campfire!
