I just baked a pan of French toast bread pudding using cubed cinnamon bread, eggs, evaporated milk, sugar and vanilla. You can also add some chopped apples. Best served warm, add a bit of butter, syrup or a little milk. Great right out of the oven, keeps in the frig for days or you can freeze it in single serving slices.
