browning avocados

I found a solution that works for me, to keep avocados from browning. Yesterday, I only needed half an avocado for an amazing chicken salad I was making for myself for lunch.

What to do with the other half? I put it, with the peel and seed in a wide mouth pint jar and vacuum sealed it with my food saver. Today, it looks just like it did when I put it in there. The browning culprit is the air and it was all removed from the jar.

I see no reason, guacamole could not be made a day ahead and stay perfectly beautiful in color, as long as it was sealed.

Could also be done with the bags if you don't have an attachment for wide mouth jars. terry r.
  • I found anther way to keep a half of an avocado from turning brown...Leave the pit in and put it skin side down in a jar or plastic container on top of a slice or two of onion. Apparently the "gas" the onion puts off counteracts the browning. I've done the vacuum bit with prepared guacamole and it does work.
  • As much as I love avocados, they seldom have a chance to turn brown. I eat the whole thing! Problem solved!

    X2 - once an avocado gets sliced the whole thing is gone. I cut it up into slices,put them in a bowl, squirt some lemon juice in and eat them with saltine crackers.

    No leftovers here to worry about.
  • The different tips may work....but like others no sliced avocado gets left behind
  • If you make an avocado dip, place a piece of plastic wrap over the bowl but make sure the plactic is touching the dip, thus sealing out air and it won't turn brown. Worked for me.
  • Spray unused portion with non-stick pam or simular, always works.

    No cover necessary.
  • I just bought a bag of organic avocados today. I'll have to give the vacuum sealing a try.
    I usually brush the cut edge with lemon juice, or in the case of guacamole, press the plastic wrap onto the surface.
    The leaving the pit in the guacamole thing is a wives tale, at least according to the avocado growers assn and scientific type culinary sources.
