We also do pizza on the grill, but we make our dough from a bag, purchased at Walmart or other store, then add the sauce from a jar, then pepperoni, cheese, mushrooms, banana peppers, onions, peppers, whatever. We put it on the fire, then tent aluminum foil over it to get the cheese to melt on top.
I also do a Cajun Chicken Stew that gets rave reviews.
1 lb chicken breast, bite-size pieces
1 can cream of chicken
1 can cream of mushroom
5 large potatoes, cubed
8 carrots, sliced
1-2 onions, chopped
1 can chicken broth
1 small package cheddar cheese
2 tsp cajun seasoning
1 pkg andouille sausage, sliced
1 container mushrooms, sliced
Put chicken and sausage in pot and cook until done. Add onions, potatoes, carrots and mushrooms with chicken broth and continue cooking for 15 minutes or until potatoes are done. Add cajun seasoning and let simmer for a few minutes, then add cream of mushroom/chicken and stir well. Continue simmering until hot and creamy. You may need to add a bit more chicken broth to thin, cajun seasoning to taste and stir in cheese.
Serve with sour cream, green onions, and more cheese for a garnish.
