Cast-iron..Everything everything sticks

Bought a cast iron griddle, it was a lodge brand, came pre seasoned. My pancakes stick, eggs stick, hash browns stick....breakfast was ruined! What am I doing wrong, people swear by cast iron and, I'm ready to throw it away and buy a Teflon coated griddle.

  • it takes awhile to get a really good patina on your griddle or skillet. use PAM as a starter to cooking and use it to finish off your griddle after you have used it. I never wash my cast iron with soapy water. I just rinse them with very hot water as soon as I'm through cooking, while the iron is still hot, then wipe dry and spray a little PAM on them and wipe off the excess.
    With a griddle, you'll probably never do anything but fry or do pancakes on it. With a skillet, if you cook something like scramble eggs or chili, something wet, you might need to re season after you're done.
    Stay with it. You'll be glad you did.

    P.S. you might be getting your griddle too hot. try turning down the heat a little.
  • To season a new pan, rub Crisco all over the pan. Put it upside down on a cookie sheet in the oven @ 275 for 4 to 5 hours. Once it is seasoned just wipe it out after cooking with it, and just rub a little oil in it each time you use it. Don't use water on it if possible. Good Luck !
  • The pan has to be seasoned before each use. Start heating the pan and use a paper towel soaked in oil to give the inside a light coating before adding your food.
