Cauliflower is having it's moment in the sun and I enjoy all the innovative ways it's being treated.
Mountain Mama, it's been a long time since I ate mashed taters but I have found that running cooked cauliflower thru a food mill (fine disc)or immersion blender gives a smoother texture that really does make it harder to tell the difference.
Also wuvvv grilled cauliflower steaks when eating vegetarian (we try to do that at least twice a week) or just not in a meat eating mood.
