I know you're looking for something a little bit different, but here is an easy and delicious potato dish for you.
We have Indianapolis Colts season tickets and tailgate every home game (and some away games) and we make this from time to time as a side dish.
Dice a five pound bag of gold potatoes. Boil them until they are about half-way done. Toss them into an 11x7 baking pan (use the disposable kind). Cut up a yellow onion and add it, cut up a pound of bacon and add it (maybe precook a little), and pour about 3/4 to an entire bottle of Italian dressing on top. Toss it on the grill and let it cook for about 30-60 minutes (depending on heat), stirring each time you need another beer.
The last time we fixed it, we tossed some Parmesan on top for the last few minutes and that turned out nice.
