Saw this...we have eggs and peppers.
The wife liked them (don't tell her where I got the idea, she thinks I am creative).
ONE SUGGESTION...use a pepper with a larger circumference. Our green pepper was rather large, the egg cooked quickly and evenly. The red pepper was smaller, causing the egg to be "thicker", making it a bit harder to cook.
As I look back at your picture, I notice a narrow pepper---cut thicker. I think my problem was the different sizes of pepper, not the actual size.
upon further reflection...me thinks the thickness of the cut should be relevant to the circumference of the pepper----just make sure the egg fits.
